Last night I tried out a new recipe and was so impressed that I just have to share it. It was delicious, filling and had just the right amount of spiciness. There are a few steps and a lot of ingredients but don't let that overwhelm you because it was really quite simple. I made my own Old Bay Seasoning but you can actually purchase this ready made at the grocery store.
Cajun Shrimp Packets
Ingredients
300g shrimp, peeled and de-veined
2 ears of corn on the cob
450g Garlic Sausage Coil, sliced
1 pound baby potatoes
3 tablespoons old bay seasoning (recipe to follow)
salt and pepper, to taste
3 teaspoons minced garlic
3 tablespoons lemon juice
3 tablespoons melted butter
Directions
1. Chop corn into four, then chop each quarter in half lengthwise. Cut potatoes in half. Boil corn and potatoes for 10 minutes. Drain and set aside.
2. In a large bowl combine shrimp, sausage, corn, and potatoes. Stir together melted butter, Old Bay seasoning, garlic, and lemon juice and pour over shrimp, sausage, and veggies. Stir to coat
3. Divide between six 12x12 inch sheets of alum
inum foil. Fold up edges around the food to create a closed packet.
4. Cook on preheated grill over medium-high heat for 8-10 minutes on one side, then flip and cook another 5-6 minutes on the second side.
5. Top with a bit of browned butter and a squeeze of lemon juice.
Old Bay Seasoning
Ingredients
2 teaspoons salt
1 teaspoon cayenne pepper 1 teaspoon paprika 1 teaspoon dry mustard 1 teaspoon ground black pepper 1 teaspoon ground bay leaf 1/4 teaspoon ground allspice 1/4 teaspoon ground ginger 1/4 teaspoon ground nutmeg 1/4 teaspoon ground cardamom 1/4 teaspoon ground cinnamon
Directions
Mix all the ingredients in a small bow until well-combined.
Brown Butter
Ingredients
½ cup unsalted butter
Directions
Melt butter in sauce pan over medium heat. Stir gently for 3-4 minutes until color changes to golden/light brown in colour.
I have a family of picky eaters and all of them enjoyed this meal. I cooked up one packet without the Old Bay Seasoning for my youngest daughter as she doesn't enjoy spicy food. My partner suggested that this would be excellent with some cornbread on the side and I will definitely make some for next time.
